The mix of diffrent kinds of apples is some of the real magic of this recipe. I like using some Granny Smith for tartness and firmness and when I can find them Envy apples are crisp and have a lot of apple flavor. My youngest daughter loves Golden Delicious for there soft sweetness. So use the rainbow of apples the diffrent flavors and textures adds so much to this pie and why not?
Pies are much easier to make than people think. The pastry can be made in a food processor what is easier than that!
