Savory and satisfying, these beef and vegetable k-bobs are full of flavor and it's an easy clean up too! You can prep veggies and beef ahead of time and let the beef sit in the marinade up to a day before. I will often cube up several freezer bags of meat at one time then I have it divided and ready to defrost and marinade in one step when I want to make a quick grilled dinner. The veggies you use are completely up to you, I aways just use veggies might be looking a little old, it's a great way to avoid waste and the grilling makes even lack luster veggies come alive with flavor!
