Italian Crockpot Chicken Sauce (Alfredo)
Equipment
- 1 Crockpot
Ingredients
- 6 Boneless Skinless chicken breasts or 10 chicken thighs with extra fat trimmed off.
- 2 tbsp olive oil
- 6 cloves garlic minced
- 2 tsp dried Italian herb blend
- 1 pkg Italian Dressing Seasoning Packet
- 1/2 tsp crushed red pepper flakes optional
- 1 cup low sodium chicken broth (can use bullion)
- 1 can cream of chicken and herbs soup
- 1 Jar Alfredo sauce
- 1/4 cup Sun-dried tomatoes, diced optional
- Salt and black pepper to taste
- Fresh parsley or basil for garnish
Pasta or Rice to serve sauce over.
Instructions
- Season the chicken breasts with salt, black pepper, and half the Italian herb blend.
- Heat olive oil in a skillet over medium-high heat; sear chicken for 2-3 minutes per side until golden brown.
- Transfer the seared chicken to the crockpot. Remember you are not trying to cook the chicken just sear the outside to add flavor to the sauce.
- In a bowl, mix cream of chicken soup, chicken broth, Alfredo sauce, minced garlic, remaining Italian herbs, basil, oregano, sun-dried tomatoes and red pepper flakes.
- Cover and cook on low for 5-6 hours or on high for 2 1/2 -3 1/2 hours until the chicken is tender and fully cooked. Either remove from pot and dice the chicken or using forks shred chicken in the crockpot.
- Adjust seasoning with salt and pepper if needed.
- Garnish with fresh parsley before serving.
