6Boneless Skinlesschicken breasts or 10 chicken thighs with extra fat trimmed off.
2tbspolive oil

2tspdried Italian herb blend
1pkgItalian Dressing Seasoning Packet
1/2tspcrushed red pepper flakesoptional
1cuplow sodium chicken broth (can use bullion)
1cancream of chicken and herbs soup
1JarAlfredo sauce
1/4cupSun-dried tomatoes, dicedoptional
Salt and black pepper to taste
Fresh parsley or basil for garnish
Pasta or Rice to serve sauce over.
Instructions
Season the chicken breasts with salt, black pepper, and half the Italian herb blend.
Heat olive oil in a skillet over medium-high heat; sear chicken for 2-3 minutes per side until golden brown.
Transfer the seared chicken to the crockpot. Remember you are not trying to cook the chicken just sear the outside to add flavor to the sauce.
In a bowl, mix cream of chicken soup, chicken broth, Alfredo sauce, minced garlic, remaining Italian herbs, basil, oregano, sun-dried tomatoes and red pepper flakes.
Cover and cook on low for 5-6 hours or on high for 2 1/2 -3 1/2 hours until the chicken is tender and fully cooked. Either remove from pot and dice the chicken or using forks shred chicken in the crockpot.
Adjust seasoning with salt and pepper if needed.
Garnish with fresh parsley before serving.
