  • 4 large eggs
  • ¼ cup milk
  • 1 cup diced poblano pepper and red bell pepper
  • ¼ cup chopped onion
  • 2 Tbsp sliced jalapeños (adjust to taste)
  • ½ cup shredded cheddar cheese
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp olive oil
  • Salt and pepper to taste
  • Salsa or pico de gallo for serving
