This is an easy way for everyone in the family to customize their own packet. Get the kids picking out veggies that they love. These can be baked or grilled, and in less than an hour each person has a full meal ready to eat, and cleanup is a breeze. This recipe also takes advantage of on of the cheapest cuts of meat, boneless skinless breast, but thighs and legs can be used to make it even cheaper. Pick your veggies up from a local farmers market where you can usually get some good deals on great produce. Not cooking for a crowd? No problem! It's an ideal way to whip up make-ahead meals with a variety of flavors, allowing each packet to have its own unique mix of veggies while all being cooked at once and easily reheated throughout the week
Tear off sheets of tin foil into roughly 12x18 inch sheets, one for each packet you are making.
Pat Chicken dry and place one piece on each sheet of foil in the center
Add the desired added veggies to each packet
Mix the dressing ingredients together in liquid measuring cup then evenly pour over each packets ingredients.
Bring up two sides of foil till they meet, seal edges folding. Make a tight 1/2 inch fold, then repeat. Fold other sides together along edge and repeat the same 1/2 inch repeated fold for a good seal. Make sure there is room for expansion and heat circulation.
Place on preheated grill or in oven set to 300℉. Cook for 20 minutes and flip. Then cook another 5-10 minutes, using a meat probe cook to an internal temperature of 165℉-170℉
Remove from heat and let rest 5 minutes. Cut an x in foil and place on plates to enjoy!
